Here are some great recipes that offer a new twist to your child’s vegetarian diet!
White Bean Burritos
White beans have a great mild flavor that most children find appealing.
Ingredients for each burrito:
4 Tablespoons canned, white beans, drained and rinsed
1/2 teaspoon lemon juice
2 Tablespoons cheddar or jack cheese
1/2 teaspoon chopped cilantro
1 Tablespoon mashed avocado
1 small flour tortilla
Directions:
Place beans and lemon juice in a bowl and mash with a fork. Mix in cheese and cilantro. Heat the mixture in microwave for 30 seconds, until cheese is melted. Spoon the bean mixture and mashed avocado on the flour tortilla crosswise, fold the tortilla in on 2 opposite sides, and roll it up lengthwise. Let it cool before serving.
Tip: If the flour tortilla seems a bit stiff, you can soften the tortilla by placing it between 2 damp paper towels and microwave 20 seconds.
Parents are often looking for a healthy alternative to the standard, sugary, preservative-filled birthday cake for their baby’s introduction to the wonderful traditions of birthdays. We’ve heard from parents looking for ways to buy an egg-free cake, to those seeking recipes for “healthy” cakes, or even whether to make/buy two cakes (one for Baby, one for adults). To answer the last question first – there is no reason to create extra work for yourself, make or buy one cake, relax and congratulate yourself for making it through the first year! Most people will be gracious guests and enjoy whatever is served. And let’s not lose sight of the real reason for the birthday cake - THE PHOTO. We do it all for the precious scrapbook shot of your cake-faced little one delighting in being the life of the party!
Here are some ideas that keep the tradition of the birthday cake treat, but add some healthy twists (you can use these ideas for any age!):
Egg-free: If your baby has not been introduced to whole eggs by their first birthday, this is probably not the occasion to give them a try. Many egg substitutes contain eggs, so to be safe, look for cake and frosting mixes labeled “vegan” which are free of all animal products. You’ll need to go to a health food store to find these products. Or jump on the Internet, Vegan Baker is one company that offers cake and frosting mixes. If baking is not for you, many urban cities also have vegan bakeries too – check the Yellow Pages or ask someone at a vegetarian restaurant.
Many believe that the gemstone garnet got its name from the pomegranate. The tiny arils of this fruit resemble the garnet’s deep-red color and shape. This recipe mixes the deep-red arils into cottage cheese creating the look of garnets buried in a blanket of snow. Try this simple dish for breakfast. The jewel and snow filling can also be spread onto graham crackers or celery sticks for a crunchy after school snack or meal time side dish.

Ingredients:
½ cup small curd cottage cheese
2 tsp honey
2 Tbsp pomegranate arils
2 tsp ground pecans (optional)
2 slices whole grain toast

We all know buying fresh is best, but when it comes to shopping for fresh produce, it is not always easiest. In fact, it is a little tricky and can be time consuming. Here are a few of our secrets to shopping smart for the fresh stuff in the produce aisle.
Buy produce that is in season: Foods that are in season are at the peak of freshness, flavor and affordability. If you don’t know if an item is in season, ask the producer manager.
Buy locally grown produce: Even the big grocery stores buy local produce, and you can also buy local produce at the farmer’s market or straight from the farm. Depending on where you live, transportation from the farm to the market takes quite a long time and often does the most damage to produce.

By weight, a baby will eat more, drink more, and even breathe more air than an adult. This means what you feed your baby (or child) has a much greater impact than it would have on you.
Most people would love to go “all organic” with their food choices. Who really wants the pesticides, hormones and preservatives in their food anyway? But going organic can be a pricey proposition. If your family is like most, your budget cannot afford 100% organic, so why not consider buying organic for some foods. Here is some simple advice on prioritizing your organic food purchases:
1. Eat organic at the top of the food chain: Purchasing organic dairy, egg and meat products is a great place to begin organic food purchases. Livestock eat pesticide-laden feed, are often dosed with antibiotics and hormones, and all of this ends up in the package at the super market. Even though produce is often associated with organic food, many of the residues on these foods can be eliminated or greatly reduced by properly cleaning and peeling them. There is no way to remove or reduce the contaminants in the meat, dairy and egg products.
