Our Favorite: Soaked Blender Pancakes!

phpcdhIxTAM-1Breakfast time is usually a big deal at our house. I try to make sure the little guy gets a healthy nutritious meal to start the day.  I also try to stay away from cereals due to their high sugar content but occassionally a bowl of cereal makes it’s way onto the table.

Since having a child I’ve made breakfast important. I mostly make meals from scratch and make the best attempt to stay away from anything packaged. The chickens have been such a blessing. We’re able to cook eggs most days any which way you can think of and have them for breakfast or “breakie” (what we call it here).

Pancakes are the biggest hit for breakie…just ask my son, he’ll tell you he wants *pancakes*! Before I knew about this recipe I’m going to share; I’d always thought I was making pancakes from scratch.

Raw Chocolate Truffles

Raw nuts are a healthy addition to any diet, and in my house we go through them almost faster than we can buy them.  They’re a great snack on their own, added to recipes, or turned into milk.

Every week after I’ve make homemade nut milk (our favorites are almond or Brazil nut) I’m left with nut pulp I’ve strained out of the milk mixture.

This pulp (which by the way can be frozen for later use) is great when dried and ground into nut flour, or used in recipes like the raw truffles my family enjoys so much.

This recipe is quick, easy, healthy, and delicious!

Drink it or Drive it: The Promise of Agave for Ethanol

gas pricesCorn has given ethanol a bad name and scientists are searching far and wide for alternative feedstock. Agave has been getting attention lately and looks very promising, although tequila connoisseurs may not be cheering. Here’s why agave is so much appealing:

High Yield Per Acre

Soybeans generate a measly 60 gallons of biodiesel annually from an acre of land and has an energy balance of 2.5. Corn generates about 300-400 gallons of ethanol per acre and has an energy balance of 1.3. Sugar cane can generate 600-800 gallons of ethanol per acre annually and has an energy balance of 8. Sugar cane unfortunately is very labor intensive to cultivate and could contribute to deforestation.

Agave however can yield an impressive 2,000 gallons of distilled ethanol per acre each year annually. Cellulosic ethanol from agave has 6 to 9 times the yield per acre. This would significantly reduce the quantity of land needed to produce the same quantity of transportations fuels.
