Chemicals have seeped into foods, air, and water, which in turn lower our system’s ability to control the chemistry of our body fluids, increasing illness and chronic disease.
The sad fact is that most food consumption in the wealthiest nations has shifted from nutritious raw foods to low nutritional value processed foods and we need to shift it back. Now that our total biological terrain is at risk, we urgently need to do some clean up by shifting our body chemistry back to the raw, organic foods it was designed to function on as we’ve evolved.

Apples are a great source of dietary fiber. As a result, they are believed to reduce the risk of some cancers, they improve the functioning of the intestines, eliminate cholesterol from the digestive tract, cleanse the lungs and colon, and help to prevent and potentially cure appendicitis.
Apples are linked to a reduced risk of prostate cancer, stroke, asthma and Type 2 diabetes. Moreover, as Healing with Whole Foods reports, due to all the pectin apples contain, they can help to reduce blood cholesterol and remove toxic metals from the body such as lead and mercury. In addition, apples are also found to play a very beneficial role in cleansing the liver.
I love to eat apples with peanut butter. It’s one of my favorite breakfast combinations. But here are a couple of interesting apple recipes that go beyond my apple and peanut butter dish. Enjoy a rice casserole with apples or apple noodle pasta for lunch or dinner sometime!
Apple harvest time arrives at the best and worst time on our Wisconsin farm and B&B, Inn Serendipity. As four bushels of apples sit on my front porch, I’m reminded of all those right reasons: the crisp flavor of fresh apples, appreciation of the harvest bounty and the tempting aroma of a pie baking in the oven.
Apple pies baking in the oven. That’s where I remember the “worst of time” mantra: apple season, like everything else on the farm this time of year, arrives during that crazy-busy, over-abundant time of year called “fall.” The final bounty of garden booty needs harvesting, along with a mile-long laundry list of farm chores that need wrapping up before the winter winds start to blow. Not ideal timing to be in the kitchen rolling piecrust. Actually, I can’t even see my counter top to roll a crust this time of year, as it is overloaded with tomatoes, zucchini and everything else in need of processing.
But don’t think this chaos of fall causes me to give up on pie making. The secret? Simplify the process. Our Inn Serendipity house favorite from our Edible Earth cookbook, Oat Apple Pie, serves up a good example of super simple pie making, as it doesn’t call for a rolled piecrust. Rather, the crust is pressed oatmeal dough, kind of like apples wrapped in a big, chewy oatmeal cookie. By rethinking the traditional pie model, you now have both cookies and pie wafting from the oven. Priceless.
Here’s the recipe, made from basic ingredients you probably have in your pantry right now. I easily adapt this for vegan B&B guests by substituting vegan margarine for the butter. This is also a great recipe for beginning pie-makers (and folks like myself with produce piling up on the counter) as there is no rolled crust.

The “green movement” is gaining some steam in the general public, and hey I am all for it. As long as it doesn’t become a fad that fades away into a footnote like slap bracelets and Crocks. The Apple iPhone is the hottest smart phone going today, and with over 65,000 applications in the iTunes App Store and counting, the usefulness of this pocket device goes up all the time. This can only mean that there will be green apps on the iPhone, and of course there will be some clunkers. With all these apps floating around there must be some gems as well. I’ll give some apps a try and tell you what I think, so you, my loyal reader, doesn’t have to.

Do you love fresh, organic, local fruit, but lack the yard space, or even live in an urban environment with little room for growing? You might want to consider growing an espalier fruit tree. No, this isn’t some new exotic type of fruit, rather it is a method for growing trees in a hedge-like manner that enables people with even the smallest yards to be able to grow fruit trees.
The definition of espalier is “a trellis or framework on which the trunk and branches of fruit trees or shrubs are trained to grow in one plane”.
Essentially what it means is progressively pruning your tree to grow in a flat plane along a fence, side of a building, or existing hedge. This approach will take several years of continuous pruning as the tree grows, as well as yearly maintenance when you perform your winter pruning and late summer thinning, but will leave you with a space efficient tree that should produce an abundance of fresh fruit.
Imagine the possibilities!
Apple fanboys might still be drooling from yesterday’s iPhone 3Gs announcement, but I bet they never saw this coming: an electric superbike with an iPhone for all its instrumentation!

The MotoCzysz E1pc is one of the many entries in the TTXGP race this Friday. How the iPhone is integrated into the bike is still a mystery but features like its native GPS will surely be used. And whether it wins or loses, it definitely gets points for creamy white geeky goodness.
Of the adjectives used to describe gluten-free baked goods, the word “fluffy” rarely makes the cut. Heavy, solid, crumbly, dry — yes, any and all of those. Those of us living sans gluten have gotten used to the slice-and-toast routine when it comes to wheatless breads. Fresh-out-of-the-oven-fluffy has all but vanished from our vocabulary. These fruit-sweetened beauties, though, change all of that.
For starters, the batter actually rose above and beyond the baking tin’s edge. When’s the last time you remember anything gluten-free doing that? These muffins even manage to disguise shredded fruits and vegetables without coming anywhere near the dreaded dense description.
Goodbye flat, vaguely muffin-shaped globules. It’s time to move on.
