Think a romantic meal of beef tenderloin with a side of potatoes sounds delicious? Maybe with a nice Bordeaux?  Perhaps it does (especially if it’s grass-fed beef!), but it may decrease your chances of conception.

A new study shows that men who want to be fathers should increase their intake of fruits and veggies and decrease their consumption of fatty foods like red meat and creamy dishes.

Men who ate healthy diets not only had faster sperm, they had more sperm in their semen. It was both a quality and quantity effect.

Dr. Jaime Mendiola of the University of Murcia, Spain said of his research:

In this study, we have found that people who consume more fruits and vegetables are ingesting more anti-oxidants and this is the important point.

We saw that, among the couples with fertility problems coming to the clinic, the men with good semen quality ate more vegetables and fruit than those men with low seminal quality.

There are obviously many factors that influence fertility, and this is only one.

With milk prices plummeting and dairy farmers facing increased feeding costs, many are culling their herds in record numbers. It seems that the value of a dairy cow is not what it once was in the industry. Other dairy farmers are not buying. Selling cows that have become too expensive to feed to the beef industry has become the only viable option for the struggling dairy farmer trying to raise cash.

In a further effort to reduce costs, male calves are being subjected to even more callous treatment and cruelty as evidenced by the recent dumping of 30 dead calves at the side of the road in San Joaquin County, California.

Eco-activists often insist that vegetarianism is the only truly earth-friendly diet for humans.  On the other hand, there are many people, honestly trying to live as green as possible, who are not yet ready to take that step completely.  Others of us find that we are just not healthy without some animal protein in our diet, and that there is some logic to the argument than humans are biologically omnivorous.

If you are a meat-eater, whatever your personal reasons may be, the problem still remains — the beef industry is a nightmare.  From enormous factory farms raising animals in horrific conditions, to growth hormones interfering with our bodies, to mad cow disease resulting from herbivores being fed ground-up brains of their kin, to the ecological devastation…  We simply cannot allow ourselves to support this industry by buying its products.

So what is the conscientious carnivore to do?

Greenpeace Brazil has released a report at the World Social Forum in Belém showing that up to 80 percent of deforestation in the Amazon rainforest is due to an increase in raising cattle for human consumption.

Brazil has quickly become the largest exporter of beef in the world, but they are not satisfied with their current market share and plan to increase production. The plan flies in the face of their supposed commitment to tackle climate change. The country is currently the fourth biggest emitter of greenhouse gases, 75% of which stem from deforestation.

What’s the problem?

J. Paul Padgett and collegues at Vanderbilt University and the University of Washington analysed the results obtained using 10 carbon footprint calculators from credible organisations including; American Forests, Bonneville Environmental Foundation (BEF), CarbonCounter,The Conservation Fund and the Environmental Impact Agency (EPA). Their results are published in the Environmental Impact Assessment Review 28 (2008). They identified the massive range refered to above, that ammounts to a difference of  180% between the lowest and highest figures and concluded that “Given their prevalence and potential influence, CO2 calculators can provide even greater public benefit by providing greater consistency and clarity.

This is one of our favorite recipes for several reasons. First, by using a cut of meat not normally used, you promote economic and environmental sustainability by making use of all the beef. The concept goes back to my practical European training where chefs “use everything from an animal.” The short rib of beef is cut from the beef back ribs consisting of seven ribs from the rib section, including the meat between the rib bones.

Second, this is a perfect dish for those cold weather months - curl up around a fire, sip a glass of red wine, and savor succulent braised meat so tender it literally falls off the bone. Lastly, I playfully like to think this recipe playfully illustrates that the concept of “surf & turf” can go beyond lobster and filet. The saltiness of the anchovy rounds out the rich beef flavors and takes this simple dish from ordinary to sublime.

Previously believed to be a food-borne disease, researchers have discovered that some cows are genetically predisposed to contract bovine spongiform encephalopathy. The report shows that up to 48,000 cattle in the United States alone could carry the gene.

The study concludes that even under the best grass-fed, grazing conditions, cows could still contract the fatal disease. “Our findings that there is a genetic component to BSE are significant because they tell you we can have this disease everywhere in the world, even in so-called BSE-free countries,” said Juergen A. Richt, the professor at Kansas State University’s College of Veterinary Medicine who conducted the study.

Perhaps most shocking of all is that this company had been a leading supplier of beef for the National School Lunch program, meaning that the meat from potentially diseased animals, animals too sick to stand, was processed and sold to schools, 100 million pounds of beef since 2002 in fact.
