<p>If you do opt for traditional quiche&#8230; please consider cage free, hormone free, organic eggs and meats.  Or find a neighbor who raises chickens and gather your own in the hen house (<a href="http://eatdrinkbetter.com/2009/02/18/save-my-chickens-take-action-against-nais/">or take a page from Cate and raise your own</a>). If you are <a href="http://ecochildsplay.com/2008/03/09/the-incredible-edible-egg-dye/">coloring eggs</a> this year, <a href="http://ecochildsplay.com/2007/04/07/naturally-dyed-easter-eggs/">consider natural dyes for a fun change</a>.</p>
<p>Another idea: if you want a traditional egg quiche, cold dye raw eggs, then blow out the egg and use it in your quiche.  This way you get both pretty, dyed eggs and something to eat while using less.</p>

Likely because my spouse is <em>not</em> a morning person, and the only other morning person around is under four, and she wakes me up daily before seven. However, the Kiddo makes some tasty scrambled eggs as long as I do the stove part and raw egg part. And, I have my hopes up for the years to come.</p>
<p>In the meantime, I will share a few favorite breakfast dishes that you moms could, say, print out, circle in great big red ink, and leave out on the counter just before hanging the &#8220;Do Not Disturb Until 9:30, or My Breakfast is Ready&#8221; sign on the bedroom door. I will live vicariously through you.</p>

<p>Okay, I&#8217;m on a sweet potato binge these days . . . </p>
<p>This has become a staple of at least one weekend breakfast or brunch meal every week.</p>
<p><em>Serves 4 (but, I usually double it for our Sunday family crowd)</em></p>
<p><strong>Ingredients</strong></p>
<p>3 medium sweet potatoes – cubed in ½” pieces<br />
½ medium red onion – cut into smaller pieces<br />
1 red pepper – cut into smaller pieces<br />
3 scallions – chopped<br />
1 clove garlic – mashed<br />
2 – 4 Tbs. Olive oil<br />
1 tsp. Cumin<br />
Crushed red pepper to taste<br />
Salt &#38; Pepper to taste<br />
2 Tbs. Cilantro</p>
<p>8 Eggs – Over easy (2 per serving)</p>
