    <title>Girl Scouts cookies - Courage, Confidence, Character &#38; Corn Syrup</title>

Yes, they have expanded their selection from the basic chocolate chip to such flavors as Dulce de Leche but for $4 a box the economy would have to get real bad for people not to support the Girl Scouts and buy a box or two.</p>
<p>Here’s the thing that gets us. What then heck are these baked goods made from? These little morsels hardly come from just flour and sugar like cookies should be. Instead these little baked treats contain ingredients that would make <a href="http://redgreenandblue.org/2008/11/26/will-obama-plant-an-organic-farm-on-the-white-house-lawn/">Michael Pollen</a> cringe. When little girls (or boys for that matter) hardly learn to bake they hardly reach for Palm Oil and <a href="http://ecochildsplay.com/2008/02/12/so-whats-in-that-happy-meal-besides-the-cheap-toy/">TBHQ</a> or Anhydrous Dextrose.

I love making and sending <a title="Making Envelopes from Recycled Paper" href="http://craftingagreenworld.com/2009/01/24/diy-valentine-make-your-own-custom-envelopes-from-recyled-paper/" target="_blank">special cards </a>to special people, helping my girls make <a title="Projects to Share with Your Children" href="http://ecochildsplay.com/2009/01/27/diy-valentine-eco-friendly-craft-projects-to-share-with-your-children/" target="_blank">small gifts for their small friends</a>, and planning something thoughtful for my own life partner. What I don&#8217;t love, however, is the mass media&#8217;s take on Valentine&#8217;s Day&#8211;all expensive greeting cards and cheap chocolates, in my opinion.</p>
<p>Every winter, my girls and I make <a title="Cinnamon cut-outs" href="http://craftknife.blogspot.com/2008/06/christmas-in-july.html" target="_blank">cinnamon cut-outs </a>as gifts and decorations for both Christmas and Valentine&#8217;s Day&#8211;the heavy, decadent, sweet scent seems appropriate for winter holidays, and combined with a dough that you roll out and cut with cookie cutters, it&#8217;s a suitable replacement for the tactile pleasure and fun of family togetherness that we might otherwise get from baking two holidays&#8217; worth of sugar cookies.</p>
<p>No, you don&#8217;t get to eat these cookies, but you do get to have them, and they&#8217;ll smell delicious forever. Here&#8217;s our recipe and tutorial:

Although we may be a little late announcing the winner, it is well worth the wait since all of you have the chance to view the fabulous entries. We have also had the chance to try the recipes and let me tell you, they were yummy! Handmade gifts have heart, are better for the environment, and, if you opt to buy, it supports independent artists!  Over the next few weeks, we&#8217;re going to be posting about recycled gifts you can make yourself and great handmade finds for sale.</h4>

<p>A mason jar full of cookie mix is a pretty traditional handmade Christmas gift.  This project gives the idea a green face lift using a delicious vegan cookie recipe.  Cutting back on eggs and dairy can help folks lower their carbon footprints by avoiding these animal products.  The recipe in this project is based on my favorite chocolate chip cookies: <a href="http://vegweb.com/index.php?topic=6391.0">Happy Vegan Chocolate Chip Cookies</a>.  These things are foolproof, and no one ever suspects that they&#8217;re vegan.  It&#8217;s a great way to help folks see that vegan baking can have delicious results!

Ya know?</p>
<p>When I first went vegetarian seven years ago I quickly realized how easy it was to replace meat with junk food. After all, I&#8217;d sacrificed so much my giving up chicken that I should reward myself with donuts, right? They&#8217;re vegetarian! And so are potato chips, and candy bars, and french fries&#8230;</p>
<p>But not only are these instant gratification foods loaded with calories, sodium, and often trans fats, but they&#8217;re not particularly eco-friendly. Consider even &#8220;healthy&#8221; choices like <a href="http://www.nabiscoworld.com/100caloriepacks/#/varieties/">Nabisco&#8217;s 100 Calorie Packs</a> of Oreos, Chips Ahoy, and the like. All come individually wrapped, and I&#8217;ve made it clear how I feel about <a href="http://eatdrinkbetter.com/2008/03/11/looking-closer-at-food/">overpackaging</a>.</p>
<p>So what&#8217;s an eco-conscious consumer to do when you just want a quick bite? I&#8217;ve done you the favor of sampling  some of the finest junk foods my co-op had to offer. (The things you do for research.) Consider some of these alternatives:</p>

I love chocolate, but I hate candy, and I am particular about my cookies.  One thing I adore is chocolate chip cookies, especially a little spoonful of dough when mixing up the batter, and with vegan cookie dough, you don&#8217;t have to worry about getting sick from eating raw egg.  This is another great recipe, like last Friday&#8217;s <a href="http://ecochildsplay.com/2007/11/30/simple-vegan-kid-friendly-soup/">Vegan Kid-Friendly Soup</a>, modified from <a href="http://www.amazon.com/gp/redirect.html?ie=UTF8&#38;location=http%3A%2F%2Fwww.amazon.com%2FNew-Farm-Vegetarian-Cookbook%2Fdp%2F0913990604%3Fie%3DUTF8%26s%3Dbooks%26qid%3D1196466825%26sr%3D8-1&#38;tag=ecochildsplay-20&#38;linkCode=ur2&#38;camp=1789&#38;creative=9325">The New Farm Vegetarian Cookbook</a>. Of course, always use organically-grown ingredients.</p>
<p><em>Preheat oven to 350 degrees. </em></p>
<ul>
<li>1 cup whole wheat flour</li>
<li>1 1/2 cup unbleached white flour</li>
<li>1/2 tsp. baking powder</li>
<li>1/2 tsp. salt</li>
</ul>
<p><em>Sift flour with the baking powder and salt (I sometimes skip the sifting).  </em></p>
<ul>
<li>1 cup <a href="http://www.amazon.com/gp/redirect.html?ie=UTF8&#38;location=http%3A%2F%2Fwww.amazon.com%2FWholesome-Sweeteners-Organic-Sucanat-16-Ounce%2Fdp%2FB000EA3M92%3Fie%3DUTF8%26s%3Dgrocery%26qid%3D1197072103%26sr%3D8-1&#38;tag=ecochildsplay-20&#38;linkCode=ur2&#38;camp=1789&#38;creative=9325">Sucanat</a> (or use 1/2 cup white sugar and 1/2 cup brown sugar)</li>
<li>1/2 cup oil (or melted butter if you aren&#8217;t vegan)</li>
<li>1/4 cup water or soymilk</li>
<li>1 tsp. vanilla</li>
</ul>
<p><em>In a separate bowl, stir together the Sucanat (sugar) and oil (butter).  Add water (soymilk) and vanilla to this &#8220;wet&#8221; mixture and blend well.  Add to the dry ingredients and stir until combined.</em>
