Meatless Monday: Cucumber, Dill and Rice Salad with Tofu “Feta Cheese” Brings a Splash of Summer Flavors

Dill HerbMost of us have a love/hate relationship with dill.  If you grew up on Scandinavian-inspired dishes, as I did, you no doubt have a fond appreciation for its distinctive flavors — I loved to feel dill’s feathery-soft leaves against my hand when exploring in my mom’s garden as a girl.  On the other hand, if your only association with dill is soggy, sickly-green supermarket pickles, then you might not be quite so keen on the herb.

Often overlooked, dill — from the Norse dilla, meaning, “to soothe” — possesses surprising characteristics.  Among its little-known superpowers are antibacterial and calming properties; the annual herb can be made into a stomach-soothing tea. Dill has been popular since Biblical times, and is even mentioned as a valuable commodity in the Gospels: “You give a tenth of your spices—mint, dill and cumin. But you have neglected the more important matters of the law—justice, mercy and faithfulness.”

Traditionally used in food to season fish or as a balance to yogurt’s tanginess, dill can also be used to brighten this protein-rich, vegan-friendly, summery rice salad.

Eight Foods for Healthy Skin

As winter approaches, it’s a great time to explore ways to keep our skin hydrated and healthy during the harsh weather ahead. Here are some wonderful skin foods that will keep your face looking fresh and youthful this season:

  1. Lemon is purifying to the body and gives a lovely glow to the skin when consumed regularly with water (it may also help the body stay regular) or tea.
  2. Apples: Did you know that organic red delicious and granny smith apples are excellent for the skin? Scientific studies have shown them to fortify both collagen and elastin production.
  3. Aloe is known to draw oxygen to the skin and lock it in. Aloe also has fantastic anti-inflammatory properties and it heals burns and wounds when applied topically. Aloe makes a wonderful refreshing juice that cleanses and purifies our inner systems. Regularly drinking aloe helps to keep the body hydrated, so if you drink coffee, which is known to dehydrate the skin, try drinking aloe juice to balance your system.

Ayurveda: Ancient Wisdom for Modern Living

We often explore ways to boost health and find wellness practices to integrate into our daily routines. One such healing philosophy is Ayurvedic medicine, used by millions in India and around the world. The term “Ayurveda” is a blend of words which mean “knowledge of a long life” or “the Science of Life“, and experts teach healthy living along with therapeutic measures that relate to physical, mental, social and spiritual harmony. Reenita Malhotra Hora is a master of the subject and is also a wonderful author here on Feelgood Style! Ayurveda is increasingly gaining popularity in the west, with ayurvedic based spa treatments, especially with the healing arts and roots lovingly intertwined with yoga exercise. Actually, very recently I was reading that “Ayurvedic Yoga” is applying Ayurveda to the practice of Yoga which emphasizes the healing aspects of Yoga. Curious about the subject? Well I am, so here is a little interview we recently did on the topic of healing with Ayurveda:

1. What are the basics of Ayurvedics diagnosis? (i.e. based upon the doshas /mind-body types)
:
A consultation with an Ayurvedic doctor enables him/her to determine your basic mind/body constitution or ‘dosha.’ There are three basic doshas:
  • Vata (comprised of air/space) - highly energetic, quick thinking, creative individuals who are physically lighter and fleet of foot.
  • Pitta (comprised of fire/water) - intense, passionate and highly intelligent individuals of a medium structure and athletic build.
  • Kapha (comprised of water/earth) - calm, grounded, ‘long term oriented’ individuals with a dense bone structure and more solid physique.

Glowing Naturally in the Summer Sun, Part II

Earlier this week we talked about some DIY tips for a healthy glow in the summer sunshine and we will continue to share skin saving tips throughout summer. Please remember when trying these natural remedies for the skin always use a good full spectrum sun protection (preferably organic). When we’re out in that sexy bikini or sundress always try to have good sun coverage for your special skin type. Stay tuned for our brilliant expert tips on great summer skin here on Feelgood Style.

Today I’d love to share more natural home remedies for glowing skin. Fruits like strawberries and papaya contain enzymes that cleanse the skin of impurities. Avocado is a rich natural moisturizer. Anti-inflammatory skin soothers like cucumber and chamomile prevent redness and calm skin after a gorgeous day in the sunshine.

Chamomile is not only a relaxing tea, but it also calms the skin. This beautiful skin article talks about how to make a simple hot chamomile towel mask to feel refreshed. Some swear by placing cool chamomile tea bags under the eyes to reduce puffy, red or tired eyes.

I also have a great summer tip for this flower. Put a little cool steeped chamomile H20 into a sprtizer bottle, and bring it with you when you are out in the sunshine! If you are a blond or brunette it will lift sunlight highlights in your lovely locks!

Cucumber cools the delicate eye area. Try placing a slice over each eye for a mini facial. For an easy cucumber face toner here is a little recipe. Keep it in the fridge for an added cooling effect after freshening up from a yoga class, brisk walk, or bike ride.

50 Ways To Great Summer Skin.

BECOME SUN SAVVY:

1. Sunscreen. Every time you step outside your skin is exposed to UVA & UVB radiation whether it’s a cloudy day or sunny. It’s advisable to apply sunscreen prior to sun exposure and again 20-30 mins after being outdoors if you are in full sun. Apply after swimming regardless of water resistant formulations. The best kinds are those that contain no chemicals and instead use microfine titanium dioxide or zinc oxide that reflect and block the harmful rays from penetrating skin.

2. Find yourself a good natural or organic SPF lip balm that contains good amounts of skin emollients like plant and nut butters to keep your lips protected and smooth.

3. Invest in a decent pair of sunglasses - preferably the wrap around variety to protect the sides of your eyes/face. Good quality lenses are critical to shield the eyes and filter out UVA & UVB rays.

4. Besides a killer pair of gorgeous shades, a hat is the next most important piece of clothing for Summer. There are a huge number of styles out there to satisfy even the most discerning eco-fashionista among you!

5. Throw on cover-up. Lightweight but densely woven clothing is the best thing to act as a barrier. Remember, skin will burn even through your clothing so if you’re spending extended time outdoors, make sure you still have sunscreen on underneath your clothes and move to the shade as much as possible.

6. A pretty parasol or vintage umbrella will not only protect you but can make a beautiful and unique fashion statement.

Cool off with Cucumber Dill Soup

cucumber soupThe calendar says May, but where I live in San Francisco, it’s been feeling like the dead of summer lately. My thermometer says 85, which is unseasonably hot for my otherwise moderate city. Usually, my lunchtime staple is soup, however a warm bowl full of chili may be great in November, but none too appealing today.

I decided instead to concoct a cooling summertime soup. I’m a sucker for Gazpacho, but I wanted something a little lighter today. I also needed to use up all the dill from my herb garden that’s been withering away in the heat.

Here’s my recipe for Cucumber Dill Soup that as refreshing as it is delicious (and not to mention, healthy and quick to prepare!)
