Honey is a source of a variety of vitamins, minerals and amino acids. The main vitamins it provides are niacin, riboflavin and pantothetic acid, and the main minerals are calcium, copper, iron, magnesium, manganese, phosphorus, potassium and zinc. Importantly, the amount of these substances in honey varies depending on its floral source, just as its color and taste vary.

Eat Your Weeds Away: Dandelion Greens

I can remember as a kid blowing the fuzz off of a dandelion weed and making a wish. Little did I know that dandelions were nutritious. Dandelion greens are considered a leafy vegetable that contain more nutrition than broccoli. Having a higher content of vitamins A, and C, and iron. Dandelions also contain lots of magnesium and potassium.

The best time to eat dandelion greens is in the spring and early summer when the leaves are still young. Dandelion greens should be harvested in early spring, before the flowers appear.  They’re a bit bitter but taste fantastic in a salad. You can also saute the flowers, roots and leaves with onion and garlic, serve them on a sandwich or salad, boil the leaves and serve like spinach or add them to your green smoothies like I do!

How to Cure a Hangover and a Tip for Prevention

Alcohol isn’t necessarily unhealthy for you, unless you overdo it. But you went ahead and had that extra drink (and maybe another as well) at the party last night, and now you’re hurting. Hangovers can be hell. Here’s a few tips to get you back on the road to recovery.

Prevention:

Curing a hangover really starts with prevention, so if you know you’ll be hoisting a few drinks in the evening (strictly socially, of course), prepare yourself. Drink lots of water during the day and eat a good meal before the first drink. Try to put away as much H2O as you can, maybe even adding a pinch of salt to it for electrolytes. If you take a multi-vitamin, make sure you’ve had yours for the day (and perhaps take an extra). Grab some B6 tablets and vitamin C and dose yourself throughout the day (follow manufacturers dosage guidelines).
