<strong>Transit use boomed from 2006-2008, but not in traditionally transit-friendly areas. This shows hope for more transit use in traditionally car-oriented places in the US in the future.</strong></p>

<p>An <a href="http://www.planetizen.com/node/41730">analysis</a> of the most recent transit use data from the U.S. Census Bureau shows that transit use grew by up to 47% in major metropolitan areas in the U.S. from 2006-2008, with several metro regions in the South and West growing by more than 10%.</p>
<p>The South and West, being more dominated by automobile-oriented development and auto use, have <a href="http://escholarship.org/uc/item/7wm9t8r6">historically struggled</a> to get significant transit ridership. However, the top ten cities with the highest recent increase in ridership include several metro areas in the South and West, including Charlotte, NC (47%), Riverside-San Bernardino-Ontario, CA (26.7%), Pheonix-Mesa-Scottsdale, AZ (23.6%), San Antonio, TX (15.1%) and others. This seems to shine a light of hope on increased transit use in the southern and western U.S. in the future.</p>

<p>The state of Wisconsin has long served as the national focal point of <a href="http://www.netstate.com/states/intro/wi_intro.htm">all things dairy</a>.  However, Wisconsin is also the epicenter of another American food culture niche, and that is alcohol.</p>
<p>My oh my, do people in Wisconsin love to drink. I live the capitol city of <a href="http://eatdrinkbetter.com/2009/10/30/rooftop-community-garden-debated-in-madison-wi/">Madison</a> and, at least once every weekend, I see snapshot of that state-bred love, either through an embarrassingly sloshed University of Wisconsin undergraduate or a too-tipsy townie. When I found out the actual <a href="http://www.jsonline.com/news/wisconsin/31237904.html">statistics</a>— that Wisconsin has the highest percentage of drinkers in the population and that, person for person, the state has three times more taverns than anywhere else in the country—I hardly blinked.</p>
<p>Still, I’ll admit that sometimes I find Madison’s hyper-boozing culture to be intimidating. At a lot of college parties, my three-drink limit is everyone else’s warm-up drill, and I’ve met more than a few Badgers whose Thirsty Thursday extends through Wednesday night. However, I’ve never tried to keep up with the crowd. I’m sure some of my peers think it’s lame that my personal bar time is midnight, and not two a.m., but I bet I look a lot cooler the next morning when I haven’t succumbed to their same fate: the head-stinging, stomach-churning, regret-inducing experience that is the hangover.</p>

    <description><![CDATA[<p>For my edition of the learning to cook Blog, I am going to start with something super simple:  Grilled cheese sandwiches, one the key staple foods of a child growing up in the Midwest.</p>
<p>But these culinary treats should not just be for moms and kids.  Playing around with the recipe some can turn this classic into a work of art, and I would like to show you how.</p>

<p>Now this is not the first time the guilty pleasures of grilled cheese have been toted on this site.  Kelly Best-Oliver spells out<a href="../2008/09/23/easy-tomato-shallot-soup-recipe/"><span style="color: blue"> her enjoyment of grilled cheese and tomatoe shallot soup</span></a>.  Robin Shreeves also<a href="../2008/09/18/thrifty-thursday-five-inexpensive-healthy-quick-meals-for-soccer-practice-nights/"><span style="color: blue"> encourages grilled cheese and tomato soup in her Thrifty Thursday Blog</span></a> from September 2008.</p>
<p>However, both these Blogs do not improve the process of making grilled cheese to improve taste.  I like to think that Grilled Cheese sandwiches can be a real meal, an almost delicacy if you will.  That is where I, Jason Karnosky&#8211;the working food journalist come in.</p>

One year ago the French company Alstom <a href="http://www.alstom.com/pr_corp_v2/2008/corp/49200.EN.php?languageId=EN&#38;dir=/pr_corp_v2/2008/corp/&#38;idRubriqueCourante=23132">began a year-long US test</a> of capturing CO2 from the water+carbon-dioxide mix created using their chilled-ammonia technology, in the smokestack of the Pleasant Prairie Power Plant in Wisconsin.</p>
<p> This week the year&#8217;s results were announced. The years average CO2 capture rate was 90%, according to a joint announcement from the EPRI, We Energies and Alstom to the Society of Environmental Journalists.</p>

<p class="MsoPlainText"><span style="font-family: Helvetica">Apple pies baking in the oven.<span> </span>That’s where I remember the “worst of time” mantra:<span> </span>apple season, like everything else on the farm this time of year, arrives during that crazy-busy, over-abundant time of year called “fall.”<span> </span>The final bounty of garden booty needs harvesting, along with a mile-long laundry list of farm chores that need wrapping up before the winter winds start to blow.<span> </span>Not ideal timing to be in the kitchen rolling piecrust.<span> </span>Actually, I can’t even see my counter top to roll a crust this time of year, as it is overloaded with tomatoes, zucchini and everything else in need of processing.</span></p>
<p class="MsoPlainText"><span style="font-family: Helvetica"><!--[if !supportEmptyParas]--><!--[endif]--></span></p>
<p class="MsoPlainText"><span style="font-family: Helvetica">But don’t think this chaos of fall causes me to give up on pie making. The secret?<span> </span>Simplify the process.<span> </span>Our <a href="http://www.innserendipity.com">Inn Serendipity</a> house favorite from our <a href="http://www.innserendipity.com/inn/edible.html">Edible Earth</a> cookbook, Oat Apple Pie, serves up a good example of super simple pie making, as it doesn’t call for a rolled piecrust.<span> </span>Rather, the crust is pressed oatmeal dough, kind of like apples wrapped in a big, chewy oatmeal cookie.<span> </span>By rethinking the traditional pie model, you now have both cookies and pie wafting from the oven.<span> </span>Priceless.</span></p>

<p class="MsoPlainText"><span style="font-family: Helvetica">Here’s the recipe, made from basic ingredients you probably have in your pantry right now.<span> </span>I easily adapt this for vegan B&#38;B guests by substituting vegan margarine for the butter.<span> </span>This is also a great recipe for beginning pie-makers (and folks like myself with produce piling up on the counter) as there is no rolled crust.</span>

As it stands, most vehicles in the world right now run on one of two fuels: gasoline, or diesel. While they perform the same function, and on the outside the engines look the same, they work in very different ways. While diesels have made progress in becoming cleaner burning, gasoline cars still dominate America&#8217;s highways.</p>

<p class="MsoNormal">Remember the last time you had the flu or a lingering cold? Get much done? When we’re healthy, we take our good health for granted. Despite what our politicians and healthcare providers might suggest, good healthcare does not necessarily provide good health. Our lifestyle and daily habits contribute to feeling great just about every day of the year.</p>

<p class="MsoNormal">Some companies provide a good healthcare plan when it comes to physician access and medical coverage. But what does that matter when the stress-filled, unhealthy environment in a cubicle – with no access to the outdoors and fresh air – ends up giving us poor health? The American healthcare system is great – perhaps the best in the world – if we crashed in our car. It’s designed for treatment, not prevention. It’s a healthcare system based on the poor health of relatively well-off people who can pay (by credit or otherwise) for the services it provides.</p>

<p>Diana Kalscheur Murphy is a goat cheesemaker from the rolling green hills of southwest Wisconsin, basing her business on her farm, aptly named &#8220;<a href="http://www.dreamfarm.biz">Dreamfarm</a>.&#8221;  &#8220;The <a href="http://www.dreamfarm.biz">Dreamfarm</a> name came before the whole cheesemaking business,&#8221; explains Murphy.  &#8220;My family and I always wanted to live on a farm and when we found this place, we realized we were living our dream.&#8221;</p>
<p>Starting with a few goats for fun, Murphy ended up with extra milk and started experimenting with making goats cheese.  &#8220;My friends gave me rave reviews and encouraged me to start producing cheese for sale,&#8221; adds Murphy.

<p>While there are some who say we will (or should) travel less in the coming years &#8212; and perhaps some of us will &#8212; let&#8217;s not forget that the travel industry is the second largest industry on this planet after the industrial-military complex.  It&#8217;s vitally important to many communities, businesses and organizations, ours included.  We operate Inn Serendipity Bed &#38; Breakfast, completely powered by the wind and sun.</p>

<h3>My first post on <a href="http://ecopreneurist.com/2008/02/02/ecotourism-the-business-of-sustaining-the-earth-through-travel/">ecotourism</a> presented an approach to travel that sustains, enhances or restores diverse ecological systems, preserves the economic and social well-being of the local and global community, and fosters a greater understanding on the part of the traveler of nature, culture or the community visited.  It’s the “triple bottom line of profits, planet and people” I write about in <a href="http://www.ecopreneuring.biz">ECOpreneuring</a>, applied to the travel industry.</h3>
<h3>This type of travel usually provides the ecotravelers with <a href="http://lisakivirist.greenoptions.com/2007/11/02/edible-activism-savor-a-dash-of-authenticity/">authentic</a> experiences (read: not merely heads on beds) and the travelers themselves participate in the renewal, restoration or revitalization process underway by the community, business or organization.  Ecotourism is a departure from the consumption and luxury focus of the mainstream tourism industry that touts all-inclusive resorts and 4-star amenities with little or no thought given to paying livable wages to employees or producing some of their own energy on site.</h3>
<h3>Since piloting a green travel program in 2007, the State of Wisconsin&#8217;s Department of Tourism, through their <a href="http://www.travelgreenwisconsin.com">Travel Green Wisconsin</a> program, has provided a framework by which already green tourism related businesses can be more easily found while those enterprises that recognize that there&#8217;s more green in going green can follow detailed certification requirements to embark on their journey to evolve, as all organizations will need to do sooner, or later, as a restorative enterprise that follows not just the laws of supply and demand, but also the laws of nature.</h3>

A vote by local planning officials this week gave them a reprieve, but the solution isn&#8217;t permanent yet.</p>
<p><em>The Capital Times </em>reports that the Drumlin Community Garden sits on property owned by the Alexander Company, which is building a commercial development on its land. The  Community Action Coalition of South Central Wisconsin has a one-year lease with Alexander for the garden portion, but the lease runs out this year.</p>

King Students of Sustainable Agriculture have begun the fall harvest at their 30,000-square-foot organic plot on campus. The green beans are coming in and more crops are on their way until the end of the growing season.</p>
<p>The F.H. King group, which has been around since 1979, does a lot more than a little gardening, though. It also offers workshops, lectures and other programs aimed at improving &#8220;knowledge and policies relating to sustainable agriculture in our community.&#8221;</p>

<p>One of 25 MacArthur Fellows for 2008, Allen will receive the $500,000 over the next five years. The financial award is designed to give Fellows a level of financial independence so they can &#8220;accelerate their current activities or take their work in new directions,&#8221; according to the MacArthur Foundation.</p>

It will prohibit any new diversions of the water to other places, and require states that border the lakes to adhere to new conservation standards.</p>
<p>Together, the five <strong>Great Lakes account for 20 percent of the world’s supply of fresh surface water</strong>.

<p>The fund would pay for efforts to prevent and control invasive species entering the lakes, clean up polluted sediments and help pay for sewer system repairs throughout the area. The program would also create a Great Lakes coordinator position in the U.S. Environmental Protection Agency.</p>
<p>Funding for Obama&#8217;s Great Lakes plan would come from reversing some existing tax cuts and incentives for oil companies.</p>

<p>Starting last May, UW-Madison police started locating the GPS-equipped bikes in places where previous bike thefts have occurred. When one of those bikes starts moving, cops know they&#8217;ve got a likely thief on the move. They can follow the bike&#8217;s movements on their computers, then dispatch officers to the scene to catch the culprit.</p>

<p>The task force has also recommended a two-pronged approach, adopting state level support for either a federal or state-level cap and trade program, as well as a series of policy recommendations for several important state industry sectors:</p>
<ol>
<li>Energy Sector</li>
<li>Transportation Sector</li>
<li>Agriculture and Forestry Sectors</li>
<li>Industry Sector</li>
